Making do- with Oatmeal!

I don’t have a whole lot of ingredients to work with

here in Virginia.  I can’t find any specialty flours in the

amounts I want to buy.  I brought down my own bread flour,

made an acceptable sourdough starter whilst here, and

have made some very decent loaves, but I wanted to make

another loaf of sourdough rye before I ran out of the loaf

I brought down.  Not going to happen, I think.

But I got a box of oatmeal today and made a loaf of

oatmeal bread.

It will do nicely for toast and peanut butter sandwiches.

AND, since I had oatmeal, I decided to make Frank his favorite

cookies ( although I don’t have any raisins, I added walnuts.)

Oatmeal Bread

ingredients:

3 cups bread flour

1 cup rolled oats

1 1/2 tsp salt

2 TBS butter

3 TBS honey

2 tsp instant yeast

1 1/4 cup scalded milk- luke warm

Mix all together, it should make a nice soft dough-not too sticky.

Place in buttered bowl and let sit to raise for 1 hour.

It will not be doubled, but nicely puffy.  Shape into a log, and place into

a greased loaf pan.  Cut slashes across top if desired. Cover and proof for

another 1 1/2 hours, top of loaf should come a couple of inches over

the top of pan.

Bake at 375 F for 35 to 45 minutes.

Cool on rack, don’t slice until completely cooled.

    I’m testing them out and trying new recipes.
    They are so handy- to have TWO and I’ve never really played with a convection oven before.

  2. Do you take your recipes with you, or did you look these up while there? Maybe you even have them memorized at this point??? 🙂

    I think I might try this oatmeal bread this week. It’s supposed to be rainy and dreary and a loaf of fresh bread sounds inviting just now.

  3. I pick up a lot of recipes from blogs. But most of what I’ve been making are from memory- and a little of this and that kind of baking! 😉
    The oatmeal bread is delicious toasted with peanut or almond butter on it.

  4. Hello Heidiannie, I just love your healthy bread always! This oatmeal bread is a must to try. This is definitely a good for you bread! I don’t have daffodils to pick but I promise myself to plant them under the tree we have on the front yard. Thanks for all these inspirations.
    To make the tools at home you will need steel sheets you can cut with shears, bend with needle nose pliers and files to sharpen edges. Then make a cookie cutter shape of your choice and try it if it works. Then make a really small version and try it on a slice of potato and punch out the hole. Keep trying until you have a really efficient tool that can make beautiful designs. Cheers!

  6. Hi Joanna and Arthur-
    I would love to get my hands on his carving tools- but I guess I’ll have to make my own- I WANT to make those fish potato chips!
    The bread turned out quite fine- I’ve been making french baguettes and knotty Italian rolls-using a quick -make do starter I made on Saturday.
    I’m thinking of calling this my test kitchen- TWO ovens- a proofer in the convection oven- I’m not used to anything this nice!
