{"id":7540,"date":"2014-01-19T11:20:53","date_gmt":"2014-01-19T15:20:53","guid":{"rendered":"http:\/\/www.heidiannie.com\/?p=7540"},"modified":"2014-08-08T21:35:02","modified_gmt":"2014-08-09T01:35:02","slug":"coconut-sheet-cake-with-cream-cheese-frosting-recipe","status":"publish","type":"post","link":"https:\/\/www.heidiannie.com\/?p=7540","title":{"rendered":"Coconut sheet cake with cream cheese frosting- recipe"},"content":{"rendered":"<div id=\"attachment_7541\" style=\"width: 594px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/026.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-7541\" class=\"size-large wp-image-7541\" title=\"026 coconut sheet cake\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/026-1024x682.jpg\" alt=\"\" width=\"584\" height=\"388\" \/><\/a><p id=\"caption-attachment-7541\" class=\"wp-caption-text\">Coconut sheet cake with cream cheese frosting- a moist dense cake.<\/p><\/div>\n<p>I love coconut cake.<\/p>\n<p>I love chocolate and yellow cakes, as well.<\/p>\n<p>I love cake, period.<\/p>\n<p>But coconut cake has such a clean edge to it- the flavor is permeated within the cake itself and then you have a bonus of toasted coconut on top, mmm!<\/p>\n<p>But it is hard to find a homemade cake that has the right flavor and mouth feel.<\/p>\n<p>I like the Sara Lee frozen coconut cake- but I wanted to make my own so I went to the recipe index on the internet and combined and played with the ingredients and amounts and came up with this winner!!!<\/p>\n<p>Notice that there is no leavening agent in the ingredients- the eggs are used to raise\u00a0 the crumb &#8211; and this is a rather dense cake- more like a pound cake than a sponge cake.<\/p>\n<p>Ingredients:<\/p>\n<p>1 cup soft butter<\/p>\n<p>6 ounces soft cream cheese<\/p>\n<p>6 eggs, separated<\/p>\n<p>1\u00a0 tsp vanilla extract<\/p>\n<p>2 cups plain or A\/P flour<\/p>\n<p>1\/3 cup coconut flour (if you can&#8217;t find flour, put some in the food processor until it is quite fine<\/p>\n<p>1\/4 cup coconut milk<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p><strong><\/strong>Preheat oven to 350 degrees F.\u00a0 Grease a 9x 13 in. cake pan.<\/p>\n<p>Cream sugar into cream cheese and butter.\u00a0 Add yolks, one at a time, until batter is<\/p>\n<p>smooth and light.\u00a0 Whip egg whites until soft peaks form and set aside.<\/p>\n<p>Add vanilla and mix well,\u00a0 Add coconut milk, mix- then add plain and coconut flour and<\/p>\n<p>mix well.\u00a0 Fold egg whites into mixture &#8211; carefully- you want it well mixed but still with lots of air in the batter.\u00a0 Gently scoop batter into greased pan and bake in pre-heated oven for 35 to 40 minutes.\u00a0 The cake should raise slightly whilst baking and will be a little browned on the edges &#8211; check doneness by inserting a clean knife or toothpick in center- when it comes out clean, the cake is done.Allow to cool completely and then ice with cream cheese icing.<\/p>\n<p>I used 1\/2 cup butter<\/p>\n<p>6 ounces cream cheese<\/p>\n<p>1 tsp vanilla<\/p>\n<p>2 cups 10x or confectioner&#8217;s sugar<\/p>\n<p>1\/2 cup coconut flour<\/p>\n<p>and beat it with a hand mixer until it was creamy<\/p>\n<p>.Then topped the frosted cake with 1\/2 cup toasted coconut.<a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/025.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-7542\" title=\"025cake slice\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/025-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/025-300x200.jpg 300w, https:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/025-1024x683.jpg 1024w, https:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/025-450x300.jpg 450w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I think the icing was a little too thick, but Frank likes more icing than I do.\u00a0 Half the recipe if your tastes run along with mine!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I love coconut cake.
