{"id":7275,"date":"2013-08-19T14:12:31","date_gmt":"2013-08-19T18:12:31","guid":{"rendered":"http:\/\/www.heidiannie.com\/?p=7275"},"modified":"2013-08-19T14:13:25","modified_gmt":"2013-08-19T18:13:25","slug":"baking-memories-elderberry-pie","status":"publish","type":"post","link":"https:\/\/www.heidiannie.com\/?p=7275","title":{"rendered":"Baking Memories- Elderberry Pie"},"content":{"rendered":"<p>I remember my mother making pie in the summer<\/p>\n<p>and autumn.\u00a0 There was no time to make pies in the<\/p>\n<p>winter or spring because she had to transplant all those<\/p>\n<p>little seedlings all day long.<\/p>\n<p>But in the late summer and early fall- there was pie!<\/p>\n<p>One of my favorite was the elderberry pies she would bake.<\/p>\n<p>Since there were 9 of us in our family \u2013 it was never just one pie<\/p>\n<p>&#8211; there were always at least two- more likely 4 pies to make at<\/p>\n<p>a time- and they would usually be gone within\u00a0 a couple of days.<\/p>\n<p>But the elderberry pies were magical for me.<\/p>\n<p>Elderberries grew in our backyard- and we waited\u00a0 until<\/p>\n<p>they were<\/p>\n<p>heavy and purple and then we picked them by the armful.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/1.bp.blogspot.com\/_jqxOL7lIOoU\/TGHVU7hK6uI\/AAAAAAAAAIA\/WyGJ5o-cSyg\/s1600\/elderberries.jpg\" alt=\"\" width=\"419\" height=\"273\" \/><\/p>\n<p>The berries as small as bb shot- and the flavor raw too intense to really<\/p>\n<p>enjoy- we would roll the heads clean into a stainless steel bowl out on the<\/p>\n<p>picnic table and when we finally got enough to make a pie- one of us little<\/p>\n<p>girls would run them into the kitchen and empty them into a bigger bowl and<\/p>\n<p>then we would start over filling the bowl.\u00a0 It took 4 cups of elderberries to<\/p>\n<p>make a pie and our thumbs and forefingers would turn purple as we deftly<\/p>\n<p>took hold of a small branch of berries and rolled them off the tiny little<\/p>\n<p>twigs holding them on.\u00a0 We would have to keep those little twigs out of the<\/p>\n<p>bowl- as well as the tiny spiders that were hanging out on those branches.<\/p>\n<p><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/08\/0092.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border: 0px;\" title=\"009\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/08\/009_thumb2.jpg\" alt=\"009\" width=\"458\" height=\"344\" border=\"0\" \/><\/a><\/p>\n<p>4 cups of elderberries, 1 cup of white sugar, 2-3 Tablespoons of lemon juice,<\/p>\n<p>4 Tablespoons of cornstarch and a tiny bit of water cooked together until the<\/p>\n<p>mixture boiled.\u00a0 Then set aside to cool down.\u00a0 Poured into a crust filled 9inch<\/p>\n<p>pie plate, dotted with butter , lightly dusted with a teaspoon of cinnamon and<\/p>\n<p>covered with a top crust.\u00a0 Baked in a 375 degree F oven for 50 minutes until the<\/p>\n<p>berries bubble up in the crust and it is all golden brown and purple.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/08\/0122.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border: 0px;\" title=\"012\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/08\/012_thumb2.jpg\" alt=\"012\" width=\"511\" height=\"384\" border=\"0\" \/><\/a><\/p>\n<p>Elderberry pie.<\/p>\n<p>Like my momma used to make.\u00a0 <img decoding=\"async\" class=\"wlEmoticon wlEmoticon-smile\" style=\"border-style: none;\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/08\/wlEmoticon-smile.png\" alt=\"Smile\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I remember my mother making pie in the summer and autumn.\u00a0 There was no time to make pies in the winter or spring because she had to transplant all those little seedlings all day long.
