{"id":5403,"date":"2012-02-15T10:48:19","date_gmt":"2012-02-15T14:48:19","guid":{"rendered":"http:\/\/heidiannie.com\/2012\/02\/quinoa-and-spelt-bread-wraps-recipe\/"},"modified":"2012-02-15T10:48:19","modified_gmt":"2012-02-15T14:48:19","slug":"quinoa-and-spelt-bread-wraps-recipe","status":"publish","type":"post","link":"https:\/\/www.heidiannie.com\/?p=5403","title":{"rendered":"Quinoa and spelt bread wraps- recipe"},"content":{"rendered":"<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2012\/02\/008.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"008\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2012\/02\/008_thumb.jpg\" alt=\"008\" width=\"454\" height=\"304\" border=\"0\" \/><\/a><\/p>\n<p>First of all, let me say \u2013 if you have only had store bought bread wraps, then<\/p>\n<p>you haven\u2019t really had anything close to a good wrap.<\/p>\n<p>These have a texture that just isn\u2019t there- and an aroma that transforms the<\/p>\n<p>whole making and eating experience into an occasion!<\/p>\n<p>I patched together 3 different recipes to come up with one that used the<\/p>\n<p>ingredients and processes that I wanted to incorporate into my wraps.<\/p>\n<p>And we ate the first ones still warm from the skillet- this in itself makes the<\/p>\n<p>whole job totally worthwhile!\u00a0 I\u2019ve made them again when the first batch was<\/p>\n<p>used up- I have a feeling I will be making these up for a long time to come.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2012\/02\/0151.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"015\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2012\/02\/015_thumb1.jpg\" alt=\"015\" width=\"463\" height=\"310\" border=\"0\" \/><\/a><\/p>\n<p>Recipe for Quinoa and Spelt flat bread wraps-<\/p>\n<p>*quinoa (pronounced Keen\u2019-wha) is the seedy top of a vegetable related to spinach.\u00a0 It was used in the<\/p>\n<p>Andes region of South America thousands of years ago- you can read about the<\/p>\n<p>origin <a href=\"http:\/\/en.wikipedia.org\/wiki\/Quinoa\" target=\"_blank\">here<\/a>.<\/p>\n<p>**Spelt is a complex wheat originally found in the Mesopotamia region.\u00a0 It predates<\/p>\n<p>bread wheat \u2013 you can read about it <a href=\"http:\/\/en.wikipedia.org\/wiki\/Spelt\" target=\"_blank\">here.<\/a><\/p>\n<p>Ingredients :<\/p>\n<p><em>2 cups AP flour<\/em><\/p>\n<p><em>1 cup spelt flour<\/em><\/p>\n<p><em>1 1\/4 to 1 1\/2 cups boiling water<\/em><\/p>\n<p><em>1\/4 cup potato flour<\/em><\/p>\n<p><em>1 tsp salt<\/em><\/p>\n<p><em>1 tsp instant or rapid rise yeast<\/em><\/p>\n<p><em>2-4 TBS vegetable oil<\/em><\/p>\n<p><em>!\/3 cup<\/em> <em>quinoa<\/em><\/p>\n<p><em>1 cup boiling water<\/em><\/p>\n<p>Method:<\/p>\n<blockquote><p>Place 2 cups AP flour in small bowl and pour 1 1\/4 cups of boiling water into bowl and stir well.<\/p>\n<p>Set aside and cool for 30 minutes.<\/p>\n<p>Brown quinoa in skillet and add 1 cup boiling water.\u00a0 Cover and simmer until water is all absorbed,<\/p>\n<p>take off heat and cool.<\/p>\n<p>In a large bowl add all ingredients together and knead for about 10 minutes. (Make sure that the boiled<\/p>\n<p>flour and quinoa aren\u2019t too hot to the touch, but don\u2019t wait until they are cold either- warmish would<\/p>\n<p>be right.)<\/p>\n<p>Oil bowl and turn the ball of dough over so that it has an oily surface on top and cover and let raise<\/p>\n<p>for an hour.\u00a0 Separate into 8 to 10 balls.<a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2012\/02\/0041.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none;
