{"id":5241,"date":"2011-12-30T10:45:43","date_gmt":"2011-12-30T14:45:43","guid":{"rendered":"http:\/\/heidiannie.com\/2011\/12\/apple-cardamom-upside-down-cake-recipe\/"},"modified":"2011-12-30T10:45:43","modified_gmt":"2011-12-30T14:45:43","slug":"apple-cardamom-upside-down-cake-recipe","status":"publish","type":"post","link":"https:\/\/www.heidiannie.com\/?p=5241","title":{"rendered":"Apple Cardamom Upside down cake- recipe"},"content":{"rendered":"<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/12\/308.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"308\" border=\"0\" alt=\"308\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/12\/308_thumb.jpg\" width=\"625\" height=\"418\" \/><\/a><\/p>\n<p>This is the best morning cake I&#8217;ve ever eaten. <\/p>\n<p>We bought a huge basket of fruit off of a truck in Onancock and had plenty of apples to eat up- so I ended up<\/p>\n<p> making this cake 3 times- that&#8217;s right THREE times- in the 2 1\/2 weeks we were down here over Christmas!<\/p>\n<p>I can imagine it only gets better over time- but it was always gone before I got back to have another slice!<\/p>\n<p>Make sure you make it in a round metal cake pan- the first time I made it was in a square glass pan and the<\/p>\n<p> caramel on top didn&#8217;t brown or spread into an appetizing looking&#160; topping!<\/p>\n<p>Recipe:<\/p>\n<p>Ingredients:<\/p>\n<p>6 TBS. unsalted butter, divided<\/p>\n<p>1\/2 cup brown sugar<\/p>\n<p>1 cup flour, AP<\/p>\n<p>1\/2 tsp cinnamon, plus extra to sprinkle on apples<\/p>\n<p>1\/2 tsp&#160; cloves<\/p>\n<p>1\/2 tsp ginger<\/p>\n<p>1\/2 tsp cardamom<\/p>\n<p>1\/2 tsp salt<\/p>\n<p>1 tsp baking powder<\/p>\n<p>1\/2 cup milk<\/p>\n<p>2 eggs<\/p>\n<p>1 cup sugar<\/p>\n<p>2 large apples, peeled and cut into slices<\/p>\n<p>Method:<\/p>\n<p>Preheat oven to 375F.<\/p>\n<p>Melt 4 TBS butter in small pan over low heat, add brown sugar and stir.<\/p>\n<p>Allow to bubble for 2 minutes and pour into bottom of 9&quot; pan and spread- set aside.<\/p>\n<p>Peel and slice apples and arrange on top of prepared pan, sprinkle apples lightly with cinnamon.<\/p>\n<p>Whisk together dry ingredients in a large bowl.&#160; Warm the milk in a small pan, add butter and melt.&#160; Let cool slightly.<\/p>\n<p>Beat eggs, add sugar and beat for 5 minutes until the sugar dissolves- add to flour , then milk, making a smooth batter.<\/p>\n<p>Pour over apples in pan.<\/p>\n<p>Bake for 45 minutes, then cool in pan for a full 15 minutes.&#160; Turn over onto serving plate.<\/p>\n<p>Great served with lightly whipped cream.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/12\/291.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"291\" border=\"0\" alt=\"291\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/12\/291_thumb.jpg\" width=\"487\" height=\"326\" \/><\/a><\/p>\n<p>I made this version in a glass square pan- good, but pale and not enough caramel on top.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/12\/307.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"307\" border=\"0\" alt=\"307\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/12\/307_thumb.jpg\" width=\"457\" height=\"306\" \/><\/a><\/p>\n<p>The third version had glazed pecans added after baking.<\/p>\n<p>Change up the spices to your liking- I would leave out the cloves and use nutmeg.<\/p>\n<p>Or allspice.&#160; The only spices I would keep constant are the cinnamon and the cardamom.<\/p>\n<p>If you try it, let me know what you did, and how it turned out !<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is the best morning cake I&#8217;ve ever eaten.
