I picked them several weeks ago.<\/p>\n

And they didn’t look very good then.<\/em><\/p>\n

And then- life got very busy.<\/p>\n

I was preoccupied with knitting.<\/p>\n

Mainly socks- but a couple of cosies got into the basket as well.<\/p>\n

And then the baby was born- and I got to be resident Grandma most of this week!<\/p>\n

So when I came home today, and smelled a sweet and earthy smell in my kitchen- I found this basket of wrinkly quinces.<\/p>\n

-wrinkled and browning-<\/em><\/p>\n

Which I intend to make into pickled quinces, tomorrow.<\/p>\n

Here’s the recipe Robin and I found at least 16 years ago- in hopes, someday of having a bumper crop of quinces.\u00a0 We never did.\u00a0 So we never made it.<\/p>\n

This is the year of the pickled quince!<\/span><\/em><\/strong><\/p>\n

Ingredients:<\/p>\n

6-7 quinces<\/p>\n

15\u00a0 fluid oz. cider vinegar<\/p>\n

1 1\/2 lbs sugar<\/p>\n

rind of one lemon<\/p>\n

3 whole cloves<\/p>\n

2 cinnamon sticks<\/p>\n

1 inch piece of ginger root<\/p>\n

1 allspice berry<\/p>\n

2 vanilla beans<\/p>\n

Method:<\/p>\n

Put the vinegar, sugar and lemon rind into an enameled saucepan.\u00a0 Wrap the spices in a muslin\/cheesecloth bag and add to the pan.\u00a0 heat until sugar dissolves, cover and simmer10 minutes.<\/p>\n

Peel and core quinces and quarter.\u00a0 Add them to the pickling juice.\u00a0 Simmer for about 1 hour, or until quinces are soft but still hold their shape.\u00a0 Cool in the liquid.\u00a0 Strain quinces and place in a clean preserving jar.\u00a0 Bring the liquid to a rapid boil and cook until reduced by half.\u00a0 Pour over the fruit which should be completely immersed.<\/p>\n

Place the 2 vanilla beans in the jar and cover tightly.<\/p>\n

Keep a month before using.<\/p>\n

I’ll let you know how they turn out.<\/p>\n

Does anyone know what you use pickled quince for?\u00a0 I’m thinking it would be like an appetizer, something akin to watermelon rind pickles.<\/p>\n

I wish I remembered WHY<\/strong> we were so anxious to make these.<\/p>\n

They sure have a lot of good spices in them.<\/p>\n

I got two jars and only one blister!<\/p><\/div>\n

The quince was really a pain- most of it was thrown away!\u00a0 But I ended up with two small jars and I’m happy with that!<\/p>\n

And I made soup from a link Celia had on her blog- Fig Jam and Lime Cordial.<\/p>\n

I love this soup- I lost my recipe I had been following before!\u00a0 And I just discovered this has a great<\/p>\n
