id=\"caption-attachment-7550\" class=\"wp-caption-text\">Poppyseed roll using a stamp- it looks fancier than it tastes!<\/p><\/div>\n<p>I have been making lots of bread since the new year started.\u00a0 And playing around with recipes and methods- because I want the bread to be to my liking.\u00a0 I don&#8217;t really care too much about how it looks- I want it to taste and feel right in my mouth.\u00a0 I&#8217;m looking for a slightly yeasty, stretchy dough similar to those I remember from my youth when we would get a loaf of Vienna bread from the bakery in Akron on the way home from church on Sunday.\u00a0\u00a0 That loaf never made it home.\u00a0 We ripped off pieces and ate them in the car- oblivious to the crumbs on our Sunday dresses- passing the loaf from hand to hand and tearing off a chunk of crust and delectable crumb that stretched as we pulled it off.<\/p>\n<p>I&#8217;ve been making bread since I was 18 years old and have only now come close to that<\/p>\n<p>bread.<\/p>\n<div id=\"attachment_7551\" style=\"width: 594px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/019.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-7551\" class=\"size-large wp-image-7551\" title=\"019\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/019-1024x682.jpg\" alt=\"Sourdough lof raised in a banneton\" width=\"584\" height=\"388\" \/><\/a><p id=\"caption-attachment-7551\" class=\"wp-caption-text\">This looks right- but the texture isn&#8217;t quite stretchy- although the flavor is wonderful!<\/p><\/div>\n<p>I love the bread I make- especially the sourdough- but like I said- the texture isn&#8217;t quite right.\u00a0 And I don&#8217;t think it is about the recipe, either-\u00a0 flour,yeast, salt olive oil and water- in varying amounts is what I&#8217;m using- usually with a cup or less of sourdough starter mixed in.<\/p>\n<div id=\"attachment_7552\" style=\"width: 594px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/022.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-7552\" class=\"size-large wp-image-7552\" title=\"022\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/022-1024x682.jpg\" alt=\"\" width=\"584\" height=\"388\" \/><\/a><p id=\"caption-attachment-7552\" class=\"wp-caption-text\">Poppy seeds and slashes make this loaf appealing.<br \/>The crumb is acceptable and great for sandwiches and toast.<\/p><\/div>\n<p>So if the recipe is good- then it is about the method.\u00a0 And I&#8217;ve been playing about with using old dough ( which is adding a piece of yeasted dough that has been saved in the refrigerator from a previous bread session- this adds to the leavening process and brings a flavor akin to sourdough ) and adding to the raising times.\u00a0 I&#8217;ve been doing two raises- punching the dough down and letting it raise twice before shaping and allowing the final raise before baking and those two have added up to being very close to what I&#8217;m looking for in texture.<\/p>\n<div id=\"attachment_7553\" style=\"width: 310px\" class=\"wp-caption-text\">Knotty Italian rolls- twice raised and twisted into shape.<\/p>\n<div class=\"mceTemp\">\n<dl id=\"attachment_7554\" class=\"wp-caption alignright\" style=\"width: crumb I&#8217;ve been looking for!<\/p><\/div>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<\/dd>\n<\/dl>\n<\/div>\n<p>I&#8217;ve been making these for years, but the addition of the old dough has made a significant difference in the crumb!<\/p>\n<p>When pulling them apart there is that stretchy quality and that extra give upon biting into the roll.<\/p>\n<p>Here is the recipe for the Italian rolls-\u00a0 http:\/\/www.heidiannie.com\/baking-day\/\u00a0\u00a0 &#8211; you have to scroll down a bit to get to the recipe- I was rather chatty the day I posted this!\u00a0 \ud83d\ude42<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>And I also found another recipe I had forgotten about-\u00a0 I really like these bread sticks- but I had misplaced the recipe and hadn&#8217;t made them for a while.\u00a0 I&#8217;m going to post it here so I can find it later even if I misplace the card again!!!<\/p>\n<p>These also have a very nice stretchy quality to them-they are delicious by themselves- great with a dip or pate` and freeze beautifully!<\/p>\n<div id=\"attachment_7555\" style=\"width: 594px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/007.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-7555\" class=\"size-large wp-image-7555\" title=\"007\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/007-1024x682.jpg\" alt=\"\" width=\"584\" height=\"388\" \/><\/a><p id=\"caption-attachment-7555\" class=\"wp-caption-text\">Salted breadsticks!<br \/>Topped with sesame seeds, Parmesan cheese, and black salt and poppyseed.<\/p><\/div>\n<p>Ingredients:<\/p>\n<p>4 1\/2 cups flour<\/p>\n<p>2 1\/2 sticks butter<\/p>\n<p>2 egg yolks<\/p>\n<p>1 cup sour cream<\/p>\n<p>2-3 tsp salt ( I like salt- you might want to use the smaller measurement)<\/p>\n<p>2 tsp. dry yeast proofed in 1\/2 cup warm water.<\/p>\n<p>Method:<\/p>\n<p>Bring all ingredients to room temperature, then mix all together in large bowl.\u00a0 Depending on the flour and the type of day, you may need to use a little extra water- you are looking for a fairly sticky dough- but still dry enough that you can shape into a ball.\u00a0 When you have a ball with all the ingredients well mixed, place on floured counter and cover with the bowl and let sit for 30 minutes.<\/p>\n<p>Lightly whip egg whites until they are just frothy and set aside.<\/p>\n<p>Roll out dough 1\/2 inch thick, brush on half of the egg whites, fold dough and let sit for an additional 30 minutes.<\/p>\n<p><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/001.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-7556\" title=\"001\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/001-1024x682.jpg\" alt=\"\" width=\"584\" height=\"388\" \/><\/a><\/p>\n<p>Roll dough out to 1\/2 inch thick again and brush on egg white, add salt, cheese or seeds on top.\u00a0 Cut into sticks , twist and place on baking sheet.<a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/005.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7557\" title=\"005\" srcset=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/005-300x200.jpg 300w, http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/005-1024x683.jpg 1024w, http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/005-450x300.jpg 450w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2014\/01\/006.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7558\" title=\"006\"
