padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border: 0px;\" title=\"007\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/07\/007_thumb.jpg\" alt=\"007\" width=\"543\" height=\"363\" border=\"0\" \/><\/a><\/p>\n<p>My daughter in law, Willow, introduced me to these \u2013 she is a marvelous cook.\u00a0\u00a0 What I like<\/p>\n<p>best about Willow\u2019s cooking is that she knows no fear.\u00a0 She follows recipes and patterns-<\/p>\n<p>adapts freely according to what she has in stock and offers it up with a panache that invites<\/p>\n<p>you to enjoy her creation along with her.<\/p>\n<p>I am pretty much a pushover when it comes to 1) cardamom, 2)fritters, and 3) Leeks- so this<\/p>\n<p>recipe was almost tailor made for me to try.\u00a0 Let me warn you- there are a lot of steps- and it<\/p>\n<p>is a little fiddley- but I think the fritters are totally worth it for a special occasion- and the recipe<\/p>\n<p>makes a LOT of fritters that are really good as left overs.<\/p>\n<p>This recipe is an adaptation from a Yotam Ottolenghi creation- but I have not seen the original<\/p>\n<p>recipe and I adapted the one I did see- so and adaptation of an adaptation.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/07\/004.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border: 0px;\" title=\"004\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/07\/004_thumb.jpg\" alt=\"004\" width=\"473\" height=\"317\" border=\"0\" \/><\/a><\/p>\n<p><strong>Ingredients: and <\/strong><em>method<\/em><\/p>\n<p>About 1\/2 cup of olive oil<\/p>\n<p>3 leeks, carefully cleaned and thinly sliced} <em>sautee leeks and <\/em><\/p>\n<p>1 medium sweet onion, chopped fine} <em>onion in 3 TBS oil for 10-15 minutes.<\/em><\/p>\n<p>1 tsp. ground cumin<\/p>\n<p>1\/2 tsp ground coriander<\/p>\n<p>1\/2 tsp ground cardamom<\/p>\n<p>1\/4 tsp\u00a0 or less ground cinnamon<\/p>\n<p><em>Mix together spices and add to sautee after 10 minutes, cook another 5 minutes.<\/em><\/p>\n<p><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/07\/005.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border: 0px;\" title=\"005\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/07\/005_thumb.jpg\" alt=\"005\" width=\"244\" height=\"164\" border=\"0\" \/><\/a><em><\/em><\/p>\n<p>1\/2 tsp hot chili paste or one hot Thai pepper seeded, sliced<\/p>\n<p>1 cup chopped fresh parsley<\/p>\n<p>2\/3 cup chopped cilantro<\/p>\n<p>6 oz ricotta or cottage cheese<\/p>\n<p><em>Cool spices and leek\/onion mix and add to herb, pepper and cheese mixture.<\/em><\/p>\n<p><em>Add 1 tsp salt and set aside.<\/em><\/p>\n<p><em>in another bowl, mix together:<\/em><\/p>\n<p>1 cup AP flour<\/p>\n<p>1 1\/2 tsps baking powder<\/p>\n<p>1 whole egg<\/p>\n<p>1\/2 cup milk<\/p>\n<p>4 TBS melted butter<\/p>\n<p><em>Beat until you have a smooth batter.<\/em><\/p>\n<p><em>Whip one egg white to soft peak and fold into cooked leek mixture, then<\/em><\/p>\n<p><em>fold entire mixture into the batter.<\/em><\/p>\n<p><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/07\/0091.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border: 0px;\" title=\"009\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/07\/009_thumb1.jpg\" alt=\"009\" width=\"428\" height=\"287\" border=\"0\" \/><\/a><\/p>\n<p><em>Fry on medium high heat with olive oil about 4 to 5 minutes a side- be careful<\/em><\/p>\n<p><em>not to make them too thick.\u00a0 Brown to golden and serve hot- with lemon wedges,<\/em><\/p>\n<p><em>if desired. <\/em><\/p>\n<p><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/07\/006.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none;
