preserved lemons in olive oil for Christmas from my dil Willow.<\/p>\n<p><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/02\/0041.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; I chopped up the peel and then<\/p>\n<p>minced it fine to go into the lentil soup I made.<\/p>\n<p><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/02\/0051.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"005\" border=\"0\" alt=\"005\" src=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/02\/005_thumb1.jpg\" width=\"488\" height=\"327\" \/><\/a><\/p>\n<p>Here\u2019s the Recipe.<\/p>\n<p>Ingredients:<\/p>\n<p>1\/3 cup olive oil <\/p>\n<p> onions, chopped small<\/p>\n<p>2 garlic cloves, minced<\/p>\n<p>2 1\/2 cups brown or green lentils<\/p>\n<p>8-10 cups water<\/p>\n<p>2 carrots, peeled and finely chopped<\/p>\n<p>2 celery stalks, finely chopped<\/p>\n<p>1 tsp ground coriander<\/p>\n<p>1 tsp cumin<\/p>\n<p>1\/2 tsp curry powder<\/p>\n<p>1\/2 tsp paprika<\/p>\n<p>6-8 tsp lemon juice<\/p>\n<p>3 tsp minced lemon peel ( or grated fresh peel if you don\u2019t have any salt preserved lemons)<\/p>\n<p>salt and pepper to taste<\/p>\n<p>Method:<\/p>\n<p>Heat up the oil in a large soup pot and add the onions, garlic and lentils.&#160; Sautee gently for about 10 minutes, stirring<\/p>\n<p>constantly-make sure that onion and garlic don\u2019t stick to bottom of pan.&#160; Pour water over mixture, stir and then raise<\/p>\n<p>heat to medium and bring soup to a boil.&#160; Add carrots and celery ( I chop my vegetables to about the size of the lentils<\/p>\n<p>so that they cook uniformly and look suited to each other).&#160; Boil for about 3o minutes and then lower the hear to low\/medium.<\/p>\n<p>Add the rest of the ingredients, as well as the salt and pepper.&#160; Stir well and cover the pot, letting the soup simmer gently for<\/p>\n<p>about 45 minutes.&#160; Taste to check the seasonings- add a little extra if you think it needs it and serve hot.<\/p>\n<p><a href=\"http:\/\/www.heidiannie.com\/wp-content\/uploads\/2013\/02\/0061.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none;
