The nights are cool- sometimes down-right<\/p>\n<p>nippy.&#160; The rose bushes are still hard at work, putting out<\/p>\n<p>little buds that may never bloom- there is a killing frost<\/p>\n<p>on the way.<\/p>\n<p>It\u2019s time for Jambalaya- Spicy and warm- tummy filling-<\/p>\n<p>sensory overloaded Jambalaya with ham and sausage and<\/p>\n<p>plump white shrimp.<\/p>\n<p>   <a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/0011.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"001\" border=\"0\" alt=\"001\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/001_thumb1.jpg\" width=\"196\" height=\"132\" \/><\/a><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/0023.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"002\" border=\"0\" alt=\"002\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/002_thumb3.jpg\" width=\"196\" height=\"132\" \/><\/a>  <\/p>\n<p>(I keep the shrimp separate because my husband doesn\u2019t like it.)<\/p>\n<p>Ingredients:<\/p>\n<p>1 ham bone with ham still on it.<\/p>\n<p>1 pkg. shrimp (medium 31-40 pieces)<\/p>\n<p>5 HOT sausage links- cut into smaller pieces ( Andouille or Chorizo- or even Hot Italian or Hungarian)<\/p>\n<p>1 onion, diced<\/p>\n<p>3 stalks celery, diced<\/p>\n<p>1 green pepper,diced (or hot peppers if you can handle it!)<\/p>\n<p>1\/2 tsp dried thyme- ground<\/p>\n<p>1\/2 tsp Old Bay seasoning<\/p>\n<p>2-3 cloves garlic crushed<\/p>\n<p>1 large can diced tomatoes<\/p>\n<p>1 cup water<\/p>\n<p>2 TBS chopped parsley<\/p>\n<p>A couple of good shakes of Cajun spice seasoning<\/p>\n<p>( or tabasco sauce or cayenne pepper)<\/p>\n<p>3 or 4 TBS olive oil<\/p>\n<p>2-3 TBS butter<\/p>\n<p>Salt and Pepper to taste<\/p>\n<p>Method:<\/p>\n<p>Pour a few good slurps of olive oil in a large pan, add the butter and <\/p>\n<p>heat until butter is melted, not browned.<\/p>\n<p>Sautee up the shrimp with the crushed garlic- one layer at a time until the<\/p>\n<p>shrimp are pink.&#160; Using a slotted spoon, take out the shrimp and put in a bowl<\/p>\n<p>to cool so that you can take off the shell later.&#160; Leave behind the butter and<\/p>\n<p>juices to sautee onion, green pepper and celery until soft, then add the ham<\/p>\n<p>bone and sausages and simmer until sausages lose their pink and add the <\/p>\n<p>diced tomatoes.&#160; Then add the water, cover and let the whole mess simmer <\/p>\n<p>for about 45 minutes on low, stirring occasionally.<\/p>\n<p>Add spices and herbs, checking on the liquid so that the ham is surrounded by<\/p>\n<p>sauce.&#160; Leave to simmer another 20 to 30 minutes- then tear or slice off ham pieces<\/p>\n<p>about the same size as sausage pieces.<\/p>\n<p>Add cleaned shrimp for another 10 minutes of simmer time, and serve next to<\/p>\n<p>or on top of pasta or rice- or next to some dirty rice.<\/p>\n<p><em>Dirty rice is made up of :<\/em><\/p>\n<p><em>rice, onions-red and white,sausage, ground beef,celery,green peppers,chopped giblets,<\/em><\/p>\n<p><em>garlic,tabasco sauce,chicken broth,smoky paprika,cumin,parsley,cayenne pepper,and <\/em><\/p>\n<p><em>anything else your palate desires!<\/em><\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/003.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none;
