{"id":4951,"date":"2011-10-09T23:14:56","date_gmt":"2011-10-10T03:14:56","guid":{"rendered":"http:\/\/heidiannie.com\/2011\/10\/making-burger-buns-recipe\/"},"modified":"2011-10-09T23:14:56","modified_gmt":"2011-10-10T03:14:56","slug":"making-burger-buns-recipe","status":"publish","type":"post","link":"http:\/\/www.heidiannie.com\/?p=4951","title":{"rendered":"Making burger buns- recipe"},"content":{"rendered":"<p><em>&#160;<\/em>I made turkey burgers the other night.<\/p>\n<p>They were great- but I didn\u2019t have any good buns<\/p>\n<p>in the freezer and I didn\u2019t want to run out and buy <\/p>\n<p>any- so I decided to make some.<\/p>\n<p>I had about a cup of tempura batter that I had made up<\/p>\n<p>the night before- and I\u2019d used skim milk and an egg in the<\/p>\n<p>batter, so I refrigerated it and decided to use it in the buns.<\/p>\n<p>PLUS- my starter was really in need of being used.&#160; I had neglected<\/p>\n<p>it lately and was just starting to feed it up, but I had a LOT of starter<\/p>\n<p>and didn\u2019t want to throw it away so I decided to make sourdough<\/p>\n<p>ham\/turkey burger buns!<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/008.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"008\" border=\"0\" alt=\"008\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/008_thumb.jpg\" width=\"403\" height=\"270\" \/><\/a><\/p>\n<p>They really turned out delicious!<\/p>\n<p>Here\u2019s the recipe.<\/p>\n<p>1 cup sourdough starter (recently fed 1 cup water\/1 cup flour)<\/p>\n<p>4 cups AP or plain flour<\/p>\n<p>1 tsp rapid rise yeast <\/p>\n<p>4 Tbs. melted butter<\/p>\n<p>1\/2 cup milk, scalded then cooled<\/p>\n<p>small egg, beaten<\/p>\n<p>1\/2 cup HOT water<\/p>\n<p>2 tsp salt ( I like a salty bread- you could cut this down if you don\u2019t)<\/p>\n<p>The milk and egg were the base of the tempura batter.&#160; So if you have<\/p>\n<p>some left over- feel free to use it in their place!<img decoding=\"async\" style=\"border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none\" class=\"wlEmoticon wlEmoticon-smile\" alt=\"Smile\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/wlEmoticon-smile.png\" \/><\/p>\n<p>I made a sponge with the starter, 1 cup flour and the milk.<\/p>\n<p>I mixed it up and left it for a couple of hours.<\/p>\n<p>It was bubbly when I came back, so I added everything else and mixed<\/p>\n<p>it all up, oiled the bowl and left it to raise\/rest for a bit.&#160;&#160; About 10 minutes<\/p>\n<p>later, I came back and folded it about 5 times, covered it and left it again-<\/p>\n<p>this time for 20 minutes.&#160; Then I folded it again for 5 or 6 times- it was smooth<\/p>\n<p>and pliant- I placed it back in the bowl and let it raise for 45 minutes.<\/p>\n<p>Then I shaped the dough into balls about the size of my fist, flattened them <\/p>\n<p>down with the palm of my hand and using a bread press made slits across the tops.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/007.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"007\" border=\"0\" alt=\"007\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/007_thumb.jpg\" width=\"489\" height=\"327\" \/><\/a><\/p>\n<p>I used parchment paper to bake on and sprinkled semolina flour on the paper before<\/p>\n<p>placing the buns on top.<\/p>\n<p>I let this raise for about 25 minutes ( suppertime was drawing near) and then baked in<\/p>\n<p>a preheated oven 375 F for about 30 minutes.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/10\/009.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none;
