SAD. downright sad.<\/p>\n<p>So I bought some rye berries-<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/0041.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"004\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/004_thumb1.jpg\" border=\"0\" alt=\"004\" width=\"235\" height=\"351\" \/><\/a><\/p>\n<p>got out my grinding apparatus-<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/005.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"010\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/010_thumb1.jpg\" border=\"0\" alt=\"010\" width=\"244\" height=\"164\" \/><\/a><\/p>\n<p>The little red hen hasn\u2019t got anything on me!<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/0131.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"013\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/013_thumb1.jpg\" border=\"0\" alt=\"013\" width=\"244\" height=\"164\" \/><\/a><\/p>\n<p>It took a little while because my grinder is<\/p>\n<p>almost as old as I am.\u00a0 And it is done by<\/p>\n<p>hand- and I didn\u2019t have it clamped down on<\/p>\n<p>my husband\u2019s new table.<\/p>\n<p>But I ended up with almost a cup and figured<\/p>\n<p>that would give me enough fiber and texture<\/p>\n<p>in my loaves.<\/p>\n<p>Then I fed up my sourdough and added 1 cup of<\/p>\n<p>the white rye and 3\/4 cup warm water and let that<\/p>\n<p>prove overnight.<\/p>\n<p>At the same time, I followed Joanna\u2019s <a href=\"http:\/\/zebbakes.com\/2011\/06\/18\/another-100-sour-rye-bread\/\">advice,<\/a><\/p>\n<p>and poured hot water on another cup of white<\/p>\n<p>rye and stirred until smooth and then left with<\/p>\n<p>the sourdough starter poolish\/sponge to prove<\/p>\n<p>for at least 8 hours (overnight).<\/p>\n<p>This morning I added the rough ground flour, 2 tsp.<\/p>\n<p>sea salt, 2 TBS butter, and 1\/4 cup sorghum molasses<\/p>\n<p>and enough water and high gluten wheat flour to<\/p>\n<p>give me enough dough for 2 loaves of bread.<\/p>\n<p>I put the dough in a warm place to raise for an hour,<\/p>\n<p>then shaped it into two loaves- one for the banneton<\/p>\n<p>and one in a loaf tin, covered them loosely and then<\/p>\n<p>let them raise another hour and a half.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/015.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"015\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/015_thumb.jpg\" border=\"0\" alt=\"015\" width=\"244\" height=\"164\" \/><\/a><\/p>\n<p><em> <\/em>I added some golden flaxseed for flavour and<\/p>\n<p>beauty and made the mistake of cutting a vent<\/p>\n<p>in the top.\u00a0 I think it destroyed the integrity of<\/p>\n<p>the gluten cloak and the loaf got sloppy in shape.<\/p>\n<p>Then I baked them a 375 F for about 45 minutes.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/0164.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"016\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/016_thumb4.jpg\" border=\"0\" alt=\"016\" width=\"244\" height=\"164\" \/><\/a><\/p>\n<p>Although I\u2019m not entering them into a beauty<\/p>\n<p>contest.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/0183.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"018\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/06\/018_thumb3.jpg\" border=\"0\" alt=\"018\" width=\"244\" height=\"164\" \/><\/a><\/p>\n<p>And I sliced it for a crumb shot before it cooled<\/p>\n<p>completely.<\/p>\n<p>All in all, I am quite happy!<\/p>\n<p>I love rye bread with golden flax seed.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I was looking for a good rye bread yesterday.
