{"id":4222,"date":"2011-05-26T20:54:20","date_gmt":"2011-05-27T00:54:20","guid":{"rendered":"http:\/\/heidiannie.com\/?p=4222"},"modified":"2011-05-26T20:54:20","modified_gmt":"2011-05-27T00:54:20","slug":"i-love-flax-and-rye","status":"publish","type":"post","link":"http:\/\/www.heidiannie.com\/?p=4222","title":{"rendered":"I love flax and rye!"},"content":{"rendered":"<div id=\"attachment_4223\" style=\"width: 310px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/05\/0014.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4223\" class=\"size-medium wp-image-4223\" title=\"001\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/05\/0014-300x200.jpg\" alt=\"Flax seed and rye sourdough bread\" width=\"300\" height=\"200\" \/><\/a><p id=\"caption-attachment-4223\" class=\"wp-caption-text\">My new favorite bread!<\/p><\/div>\n<p>This is my new favorite bread!<\/p>\n<p>I made it today, using a sourdough<\/p>\n<p>sponge and after several hours of<\/p>\n<p>raising, added white and dark rye flour,<\/p>\n<p>And 2 Tbs. of soft butter, and 2 Tbs.<\/p>\n<p>of molasses and 2 tsp. salt, and 1 Tbs.<\/p>\n<p>rapidrise yeast, and 1 cup HOT water.<\/p>\n<p>I mixed it up and then added 1 1\/2 cups<\/p>\n<p>high gluten hard wheat bread flour and kneaded it for about 10 minutes.\u00a0 It was a rather sticky<\/p>\n<p>dough, so I oiled the bowl and let it raise for about 2 1\/2 hours and then cut the dough in half<\/p>\n<p>and added some golden flax seed that I had soaking in hot water.\u00a0 The golden flax became soft,<\/p>\n<p>and the water almost gelatinous.\u00a0 I love the caraway flavor with rye so I added a Tbs of caraway<\/p>\n<p>seeds as well, shaped each into a loaf and put into a greased loaf pan for a final raise.<\/p>\n<p>It was ready in about an hour and a half and I baked them at 350 degrees F.\u00a0\u00a0 The loaves were<\/p>\n<p>high and firm- and the flavor &#8211; PERFECT!<\/p>\n<p>I had a little visitor for dinner tonight- Aiden asked for a second piece of bread after he had<\/p>\n<p>finished his meal.<\/p>\n<p>This is His new favorite bread, too, I think!<\/p>\n<div id=\"attachment_4224\" style=\"width: 210px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/05\/0024.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4224\" class=\"size-medium wp-image-4224\" title=\"002\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/05\/0024-200x300.jpg\" alt=\" bread-rye and flax seed\" width=\"200\" height=\"300\" \/><\/a><p id=\"caption-attachment-4224\" class=\"wp-caption-text\">Another view!<\/p><\/div>\n","protected":false},"excerpt":{"rendered":"<p>This is my new favorite bread!
