{"id":3962,"date":"2011-04-04T17:41:34","date_gmt":"2011-04-04T21:41:34","guid":{"rendered":"http:\/\/heidiannie.com\/?p=3962"},"modified":"2011-04-04T17:41:34","modified_gmt":"2011-04-04T21:41:34","slug":"sobao-pasiego-sponge-butter-cake","status":"publish","type":"post","link":"http:\/\/www.heidiannie.com\/?p=3962","title":{"rendered":"Sobao Pasiego-  sponge butter cake."},"content":{"rendered":"<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/04\/007.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"007\" border=\"0\" alt=\"007\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/04\/007_thumb.jpg\" width=\"464\" height=\"311\" \/><\/a><\/p>\n<p>I got the recipe and idea from Arthur of <a href=\"http:\/\/michelangelointhekitchen.blogspot.com\/2011\/03\/sobao-pasiego-spanish-regional-pastry.html\">Art is in the kitchen.<\/a>&#160; He makes the most <\/p>\n<p>beautiful food I\u2019ve EVER seen.&#160; And I love the way he shares his pictures and recipes.<\/p>\n<p>But when I tried to make these parchment paper boxes- it was a major failure.<\/p>\n<p>His were all the same size- folded with a knowledge of origami and they were perfect.<\/p>\n<p>Mine?&#160; Well, I had to staple them to keep them together, they are all different sizes,<\/p>\n<p>and I gave up after the third one looked worse than the first.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/04\/0011.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"001\" border=\"0\" alt=\"001\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/04\/001_thumb1.jpg\" width=\"442\" height=\"296\" \/><\/a><\/p>\n<p>I have limited folding skills.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/04\/0071.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"007\" border=\"0\" alt=\"007\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/04\/007_thumb1.jpg\" width=\"451\" height=\"302\" \/><\/a><\/p>\n<p>So I pulled out my small molds and pans and after deciding against the cat\u2019s <\/p>\n<p>tongue cookie and the madeleine\u2019s ( although these taste like a large madeleine)<\/p>\n<p>used the small loaf pans in a row.&#160; I have NO idea what this pan is supposed to be used<\/p>\n<p>for- I use it to make small loaves.&#160; Not bread- fruitcake, Sobao Pasiego, banana bread, etc.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/04\/006.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"006\" border=\"0\" alt=\"006\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/04\/006_thumb.jpg\" width=\"303\" height=\"452\" \/><\/a><\/p>\n<p>I lined the pans with parchment paper and baked them.<\/p>\n<p>And then as soon as they cooled off a little- I promptly ate<\/p>\n<p>two of them. <\/p>\n<p>With a cup of tea.<\/p>\n<p>I\u2019ve been thinking about these for a long time, and just<\/p>\n<p>decided to give them a joyous impromptu taste test !<\/p>\n<p>THAT\u2019S how I know they taste like madeleine\u2019s! <\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/04\/005.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"005\" border=\"0\" alt=\"005\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/04\/005_thumb.jpg\" width=\"391\" height=\"262\" \/><\/a><\/p>\n<p>I saved the cakes- in fact \u2013 I froze them, because otherwise I would<\/p>\n<p>have eaten them too.<\/p>\n<p>If you like buttery, lemony, slightly spongey and delicious- then you<\/p>\n<p>understand. <\/p>\n<p><strong><em><u>These are not safe in my house.<\/u><\/em><\/strong><\/p>\n<p>Here\u2019s my take on the recipe if you are interested.<\/p>\n<p>Maybe these little cakes will be safe in your house.<\/p>\n<p><u>Ingredients:<\/u><\/p>\n<p>I cup AP flour<\/p>\n<p>1\/2 cup sugar<\/p>\n<p>1\/2 cup melted butter<\/p>\n<p>2 large eggs, separated<\/p>\n<p>1\/2 tsp baking powder<\/p>\n<p>1 lemon rind, grated<\/p>\n<p>1 tsp rum or anisette<\/p>\n<p>a pinch of salt<\/p>\n<p><u>Method:<\/u><\/p>\n<p>Beat egg whites until firm.&#160; Set aside.<\/p>\n<p>Sift together flour,salt and baking powder.&#160; Set aside.<\/p>\n<p>In medium mixing bowl, beat the butter and sugar until <\/p>\n<p>creamy looking and then add lemon rind and egg yolks.<\/p>\n<p>Fold half of egg whites into the butter mixture, add rum,<\/p>\n<p>and then fold in the flour mixture.&#160; When mixed, add the <\/p>\n<p>rest of the beaten egg whites and fold.<\/p>\n<p>Fill whatever receptacle you decide to use about 2\/3 full <\/p>\n<p>and bake in preheated oven at 350 degrees F for 8- 15 minutes,<\/p>\n<p>or until golden brown.<\/p>\n<p>Have I mentioned that these are delicious with a cup of tea?<\/p>\n<p>or coffee?<\/p>\n<p>or milk?<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I got the recipe and idea from Arthur of Art is in the kitchen.&#160; He makes the most beautiful food I\u2019ve EVER seen.&#160; And I love the way he shares his pictures and recipes.
