{"id":3835,"date":"2011-03-09T16:48:58","date_gmt":"2011-03-09T20:48:58","guid":{"rendered":"http:\/\/heidiannie.com\/?p=3835"},"modified":"2011-03-09T16:48:58","modified_gmt":"2011-03-09T20:48:58","slug":"making-do-with-oatmeal","status":"publish","type":"post","link":"http:\/\/www.heidiannie.com\/?p=3835","title":{"rendered":"Making do- with Oatmeal!"},"content":{"rendered":"<p>I don\u2019t have a whole lot of ingredients to work with <\/p>\n<p>here in Virginia.&#160; I can\u2019t find any specialty flours in the<\/p>\n<p>amounts I want to buy.&#160; I brought down my own bread flour,<\/p>\n<p>made an acceptable sourdough starter whilst here, and<\/p>\n<p>have made some very decent loaves, but I wanted to make<\/p>\n<p>another loaf of sourdough rye before I ran out of the loaf<\/p>\n<p>I brought down.&#160; Not going to happen, I think.<\/p>\n<p>But I got a box of oatmeal today and made a loaf of <\/p>\n<p>oatmeal bread.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/03\/009.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"009\" border=\"0\" alt=\"009\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/03\/009_thumb.jpg\" width=\"384\" height=\"257\" \/><\/a><\/p>\n<p>It will do nicely for toast and peanut butter sandwiches.<\/p>\n<p>AND, since I had oatmeal, I decided to make Frank his favorite<\/p>\n<p>cookies ( although I don\u2019t have any raisins, I added walnuts.)<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/03\/003.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"003\" border=\"0\" alt=\"003\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/03\/003_thumb.jpg\" width=\"389\" height=\"582\" \/><\/a><\/p>\n<p>I picked some daffodils this morning-<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/03\/0011.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"001\" border=\"0\" alt=\"001\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/03\/001_thumb1.jpg\" width=\"385\" height=\"576\" \/><\/a><\/p>\n<p>Don\u2019t they look pretty next to the cookie jar?<\/p>\n<p><strong>Oatmeal Bread<\/strong><\/p>\n<p><strong>ingredients:<\/strong><\/p>\n<p><strong>3 cups bread flour<\/strong><\/p>\n<p><strong>1 cup rolled oats<\/strong><\/p>\n<p><strong>1 1\/2 tsp salt<\/strong><\/p>\n<p><strong>2 TBS butter<\/strong><\/p>\n<p><strong>3 TBS honey<\/strong><\/p>\n<p><strong>2 tsp instant yeast<\/strong><\/p>\n<p><strong>1 1\/4 cup scalded milk- luke warm<\/strong><\/p>\n<p><strong>Mix all together, it should make a nice soft dough-not too sticky.<\/strong><\/p>\n<p><strong>Place in buttered bowl and let sit to raise for 1 hour.<\/strong><\/p>\n<p><strong>It will not be doubled, but nicely puffy.&#160; Shape into a log, and place into<\/strong><\/p>\n<p><strong>a greased loaf pan.&#160; Cut slashes across top if desired.
