{"id":3607,"date":"2011-01-23T20:48:53","date_gmt":"2011-01-24T00:48:53","guid":{"rendered":"http:\/\/heidiannie.com\/?p=3607"},"modified":"2011-01-23T20:48:53","modified_gmt":"2011-01-24T00:48:53","slug":"konigsberger-klopse-or-meatballs-in-brown-gravy","status":"publish","type":"post","link":"http:\/\/www.heidiannie.com\/?p=3607","title":{"rendered":"Konigsberger Klopse or meatballs in brown gravy"},"content":{"rendered":"<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/01\/045.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"045\" border=\"0\" alt=\"045\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/01\/045_thumb.jpg\" width=\"394\" height=\"264\" \/><\/a>  <\/p>\n<h5>Ingredients:<\/h5>\n<ul>\n<li>\u00bd lb. ground pork <\/li>\n<li>\u00bd lb. ground beef <\/li>\n<li>2 small, day-old rolls or 2 slices of bread <\/li>\n<li>1 egg yolk <\/li>\n<li>2 small onions, 1 chopped fine, 1 quartered <\/li>\n<li>1 Tbsp + 2 Tbsp butter or margarine, divided <\/li>\n<li>4 cups vegetable or beef broth <\/li>\n<li>salt and pepper <\/li>\n<li>5 whole peppercorns <\/li>\n<li>4&#160; allspice berries<\/li>\n<li>1 bay leaf (optional) <\/li>\n<li>2 Tbsp flour <\/li>\n<li>1-2 Tbsp lemon juice <\/li>\n<li>2-3 Tbsp Golden Sherry <\/li>\n<li>2-4 Tbsp sour cream <\/li>\n<li>24 capers, drained <\/li>\n<\/ul>\n<p>&#160;<\/p>\n<h5>Method:<\/h5>\n<p>Soak the day-old rolls in water and squeeze almost dry.<\/p>\n<p>Melt 1 tablespoon butter and cook 1 onion, chopped fine, until translucent.<\/p>\n<p> Cool, slightly.<\/p>\n<p>&#160;<a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/01\/041.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"041\" border=\"0\" alt=\"041\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/01\/041_thumb.jpg\" width=\"357\" height=\"239\" \/><\/a><\/p>\n<p>Place the ground meats in a bowl, add cooked onion and the rolls, broken<\/p>\n<p> in pieces. Add salt and pepper to taste, about \u00bd teaspoon salt and<\/p>\n<p> \u00bc teaspoon pepper. Mix everything well by hand or with a spoon until<\/p>\n<p> mixture can be formed into round meatballs. Add a few tablespoons <\/p>\n<p>of broth if necessary to achieve this. Form 10-12 meatballs. <\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/01\/0421.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"042\" border=\"0\" alt=\"042\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/01\/042_thumb1.jpg\" width=\"362\" height=\"243\" \/><\/a><\/p>\n<p>Bring the rest of the broth, with the cracked spices and second onion,<\/p>\n<p> quartered, to just under a boil and add the meatballs carefully.<\/p>\n<p> Cook until done, about 12 minutes. Remove meatballs and keep warm.<\/p>\n<p>&#160;<a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/01\/044.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px\" title=\"044\" border=\"0\" alt=\"044\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2011\/01\/044_thumb.jpg\" width=\"371\" height=\"248\" \/><\/a><\/p>\n<p>Melt 2 tablespoons butter in a pan and add the flour, making a roux. <\/p>\n<p> Little by little, stir about 1 \u00bd cups of the meatball broth, strained,<\/p>\n<p> into the roux, stirring to keep the sauce smooth. Add the capers.<\/p>\n<p> Add the sherry and season the sauce to taste with lemon juice<\/p>\n<p> and sour cream.
