{"id":3401,"date":"2010-12-30T17:02:16","date_gmt":"2010-12-30T21:02:16","guid":{"rendered":"http:\/\/heidiannie.com\/?p=3401"},"modified":"2010-12-30T17:02:16","modified_gmt":"2010-12-30T21:02:16","slug":"cookies-for-the-new-year","status":"publish","type":"post","link":"http:\/\/www.heidiannie.com\/?p=3401","title":{"rendered":"Cookies for the New Year"},"content":{"rendered":"<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01463.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom: 0px; border-left: 0px; display: inline; border-top: 0px; border-right: 0px\" title=\"DSC01463\" border=\"0\" alt=\"DSC01463\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01463_thumb.jpg\" width=\"394\" height=\"296\" \/><\/a>  <\/p>\n<p>&#160;<\/p>\n<p>I made a lot of cookies in the month of December.<\/p>\n<p>Tomorrow is the last day of this month and I took an inventory of what I have left.<\/p>\n<p>NOT MUCH!<\/p>\n<p>We have been eating around the edges of what I didn\u2019t give away.<\/p>\n<p>I gave most of them away in cookie sampler bags.<\/p>\n<p>All in all- around 25 bags of some yummy good samples- at least 2 dozen cookies in each bag- <\/p>\n<p>That is a lot of cookies!<\/p>\n<p>I have some left- about 6 dozen.<\/p>\n<p>But I don\u2019t have any of the Finnish Ribbon Cookies left.<\/p>\n<p>I know because these are one of MY favorite cookies- <\/p>\n<p>and they are all gone.<\/p>\n<p>So I\u2019m going to make some more in January.&#160; And keep them in a tin.<\/p>\n<p>Here\u2019s the recipe if you\u2019d like some, too!<\/p>\n<p>(I don\u2019t KNOW for certain if these are genuinely Finnish- I got the <\/p>\n<p>recipe from a copy of Southern Living Magazine many years ago.)<\/p>\n<p>Finnish Ribbon Cookies<\/p>\n<p>Ingredients:<\/p>\n<p> 1 cup butter or margarine<\/p>\n<p>1\/2 cup sugar<\/p>\n<p>1 egg yolk<\/p>\n<p>1 tsp vanilla<\/p>\n<p>1\/2 tsp lemon peel<\/p>\n<p>2 1\/2 cups flour<\/p>\n<p>1\/4 tsp salt<\/p>\n<p>6 TBS preserves ( raspberry, apricot, fig- whatever you choose.)<\/p>\n<p>Method:<\/p>\n<p>Cream butter (room temperature) with sugar, add yolk and vanilla and mix until<\/p>\n<p>light and fluffy.&#160; Add salt and lemon peel to flour and mix into&#160; butter mixture <\/p>\n<p>cup at a time.<\/p>\n<p>Divide dough into four portions and roll out onto parchment paper into long rolls.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01458.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom: 0px; border-left: 0px; display: inline; border-top: 0px; border-right: 0px\" title=\"DSC01458\" border=\"0\" alt=\"DSC01458\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01458_thumb.jpg\" width=\"225\" height=\"170\" \/><\/a> <a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01457.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom: 0px; border-left: 0px; display: inline; border-top: 0px; border-right: 0px\" title=\"DSC01457\" border=\"0\" alt=\"DSC01457\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01457_thumb.jpg\" width=\"225\" height=\"170\" \/><\/a> <\/p>\n<p>Using pencil or wooden spoon handle or chop stick- make furrows down<\/p>\n<p>each roll and bake for 10 minutes in a preheated oven at 375 F. .<\/p>\n<p>&#160; Allow to cool on pan, then spoon your favorite fillings into the<\/p>\n<p>grooves and cut on a diagonal.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC014621.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom: 0px; border-left: 0px; display: inline; border-top: 0px; border-right: 0px\" title=\"DSC01462\" border=\"0\" alt=\"DSC01462\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01462_thumb1.jpg\" width=\"422\" height=\"318\" \/><\/a> <\/p>\n<p>Decorate with thin glaze drizzled on top and deal gently with them <\/p>\n<p>when taking off baking sheet.&#160; They are prone to break. \ud83d\ude42<\/p>\n<p>And then you can eat them without guilt.<\/p>\n<p>Broken cookies don\u2019t have any calories, do they?<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&#160; I made a lot of cookies in the month of December.
