Fisher, <em>The Art of Eating<\/em><\/p>\n<p><em>This is so very true.<\/em><\/p>\n<p><em>And for the past two days my thoughts have been pure.<\/em><\/p>\n<p><em>PURE BREAD!<\/em><\/p>\n<p><em>I made a lovely couple of loaves of toasting bread.&nbsp; I love this bread.<\/em><\/p>\n<p><em>It cannot be burnt in a normal toaster- and my husband is notorious for burning the toast.&nbsp; So for his birthday I made him some bread he can&#8217;t burn!<\/em><\/p>\n<p><em><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01348.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"330\" alt=\"DSC01348\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01348_thumb.jpg\" width=\"439\" border=\"0\"><\/a><\/em><\/p>\n<p><em>As a special surprise, I sliced it, too!<\/em><\/p>\n<p><em>Then I made him a carrot cake for his Birthday.<\/em><\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01349.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"DSC01349\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01349_thumb.jpg\" width=\"239\" border=\"0\"><\/a> <\/p>\n<p>It was quite lovely, as well.<\/p>\n<p>And then- I made some sourdough bread- it doesn&#8217;t burn in the toaster either- and it has a greater appeal for my taste buds.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01364.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"314\" alt=\"DSC01364\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01364_thumb.jpg\" width=\"418\" border=\"0\"><\/a> <\/p>\n<p>I tried a method of baking I&#8217;ve been hearing a lot about and decided to give it a try.&nbsp; Actually, Joanna,<a href=\"http:\/\/zebbakes.com\/2010\/11\/28\/grapplestein-son-of-oregon\/\">over at ZEB BAKES<\/a>, made some the other day and inspired me to try.<\/p>\n<p>It is baked in a VERY hot pot inside a VERY hot oven.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01366.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"DSC01366\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01366_thumb.jpg\" width=\"239\" border=\"0\"><\/a> This pot- an old cast iron pot I got at a garage sale many years ago.&nbsp; I&#8217;ve used it to cook chili in the fireplace when the electricity was out- I&#8217;ve made coney sauce in it over the grill- and now it has baked my bread!&nbsp; <a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01351.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"DSC01351\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01351_thumb.jpg\" width=\"239\" border=\"0\"><\/a> <\/p>\n<p>( I lined it with parchment paper)<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01352.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"DSC01352\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01352_thumb.jpg\" width=\"239\" border=\"0\"><\/a> &#8211; because the bread raised in a bowl in the garage all night and I didn&#8217;t want to disturb it- so I lifted it with the paper and gently dropped it into the VERY hot pot and baked it up.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01365.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; I think I needed to degas it and let it raise again- but I really wanted it for my toast this morning.<\/p>\n<p>Joanna also made some brioche and shared the recipe.<\/p>\n<p>So I made it too.<\/p>\n<p>I had made brioche years ago and then never made it again.<\/p>\n<p>Now I remember why.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01353.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"DSC01353\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01353_thumb.jpg\" width=\"239\" border=\"0\"><\/a> <\/p>\n<p>Brioche is a very buttery and eggy bread.<\/p>\n<p>The dough is very sticky.<\/p>\n<p>And to make it right- you have to give it a lot of time to develop.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01356.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; not great- but acceptable-<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01371.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"244\" alt=\"DSC01375\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/12\/DSC01375_thumb.jpg\" width=\"184\" border=\"0\"><\/a>&nbsp; I bought this book back in 1996.&nbsp; And I made her breads- sourdough and artisan breads- great recipes- In fact- my sourdough baking started that year because of her delicious breads.<\/p>\n<p>But she has them labeled by time allotments- and the brioche was a 3 day bread.<\/p>\n<p>First a white starter, then a long time in the cooler- then a cold mix with the mixer going for about 20-30 minutes.&nbsp; Then another long time in the cooler.<\/p>\n<p>Then shaping- a VERY long raise and baked at 500 degrees F- and I didn&#8217;t enjoy the egg taste.&nbsp; <\/p>\n<p>But &#8211; I made it- gave it another try- and won&#8217;t be making it again.<\/p>\n<p>Thanks Joanna for the challenge-<\/p>\n<p>I&#8217;ll be taking this with some jelly to knitting class, tomorrow.<\/p>\n<p>Maybe they like brioche!<\/p>\n<p>&nbsp;<\/p>\n<p><em>Nancy Silverton&#8217;s Breads from the La Brea Bakery, (1996) is still available from Amazon Books.<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>&#8230;
