{"id":3198,"date":"2010-11-29T12:20:14","date_gmt":"2010-11-29T16:20:14","guid":{"rendered":"http:\/\/heidiannie.com\/?p=3198"},"modified":"2010-11-29T12:20:14","modified_gmt":"2010-11-29T16:20:14","slug":"making-plans-and-souprecipe-included","status":"publish","type":"post","link":"http:\/\/www.heidiannie.com\/?p=3198","title":{"rendered":"Making plans&#8230;and soup!(recipe included)"},"content":{"rendered":"<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/11\/image8.png\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"319\" alt=\"image\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/11\/image_thumb8.png\" width=\"475\" border=\"0\"><\/a> <\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <strong><em><u>Assateague Island Beach<\/u><\/em><\/strong><\/p>\n<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; November 2010<\/p>\n<p>This is where I long to be!<\/p>\n<p>And will be soon- Meredith is coming home in mid-December and we are headed down to Chincoteague.&nbsp; Look at the waves!&nbsp; I can hardly wait to stand on the beach and look at the beauty and majesty of the Atlantic!<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/11\/DSC01340.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"350\" alt=\"DSC01340\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/11\/DSC01340_thumb.jpg\" width=\"465\" border=\"0\"><\/a> <\/p>\n<p>And now on to the soup-<\/p>\n<p>Curried Squash and sausage soup with spinach.<\/p>\n<p>I made this just after Thanksgiving.&nbsp; I wanted a totally different taste from the whole turkey and stuffing menu- and I had leftover squash, pumpkin and sausage from the pies and stuffing.<\/p>\n<p>This was perfect for the cool temperatures and made a great black Friday lunch.<\/p>\n<p>It was also great on Saturday when Jordan and I finished it off.<\/p>\n<p>Ingredients:<\/p>\n<p>1 medium squash -baked and cleaned<\/p>\n<p>1\/2 lb bulk sausage- I used Italian, sautee and chop fine<\/p>\n<p>1 small onion-diced<\/p>\n<p>2 ribs celery-diced<\/p>\n<p>1 TBS olive oil<\/p>\n<p>2 TBS curry powder<\/p>\n<p>4 cups chicken brothe<\/p>\n<p>1\/2 lb baby spinach<\/p>\n<p>S+P to taste<\/p>\n<p>I added the leftover pumpkin(canned, about 3\/4 cup) to the squash and blended it with an immersion blender.<\/p>\n<p>Method:<\/p>\n<p>Sautee the onions and celery in the olive oil until tender,&nbsp; add the cooked sausage, and the squash mix and stir in the curry powder.&nbsp; Salt and pepper to taste, then add the chicken broth and heat.&nbsp; Simmer for about 10-15 minutes, then add the spinach and stir until they wilt into the soup.&nbsp; Taste &#8211; I added a little coconut milk ( or cream or half and half) at this point, because it was just a little harsh and I was looking for mellow.&nbsp; I also added a little (1\/2 tsp) of dried basil- it was that kind of day- adding until it tasted just right.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Assateague Island Beach &nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; November 2010 This is where I long to be!
