{"id":2493,"date":"2010-08-12T08:59:10","date_gmt":"2010-08-12T12:59:10","guid":{"rendered":"http:\/\/heidiannie.com\/?p=2493"},"modified":"2010-08-12T08:59:10","modified_gmt":"2010-08-12T12:59:10","slug":"folding-and-braiding-bread-dough","status":"publish","type":"post","link":"http:\/\/www.heidiannie.com\/?p=2493","title":{"rendered":"Folding and Braiding bread dough"},"content":{"rendered":"<p> What I like most about bread is&#8230;<\/p>\n<p>eating it, of course!<br \/>But what I like most about making bread is the versatility of design and pattern that you can incorporate into your loaf or bun\/roll.<\/p>\n<p>Yesterday I made two different doughs-<\/p>\n<p>~rye with caraway seeds~<\/p>\n<p>~sourdough peasant ~<\/p>\n<p>I had different purposes for each bread- the rye for sausage rolls and the sourdough for a picnic sandwich loaf.&nbsp; They worked out perfectly &#8211; I folded the rye and sliced it (as Celia showed in one of her <a href=\"http:\/\/http:\/\/figjamandlimecordial.com\/2010\/06\/14\/school-rolls\/\">posts<\/a> , entitled school rolls.)<\/p>\n<p>It was so easy and fun and they rolls were a perfect complement for the Italian sausage I fixed for supper.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/08\/braided-wreath-and-rye-buns-014.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"96\" alt=\"braided wreath and rye buns 016\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/08\/braided-wreath-and-rye-buns-016_thumb.jpg\" width=\"127\" border=\"0\"><\/a> <\/p>\n<p>This dough was made with Ohio grown and milled rye and wheat, and topped off with caraway seeds I grew in my herb garden.&nbsp; Freshly harvested caraway seeds are magnificent in fragrance and flavor- and very easy to grow and harvest.&nbsp; If you love caraway seed at all, I suggest you try growing your own.&nbsp; It is very rewarding!<\/p>\n<p>I braided the sourdough peasant bread.<\/p>\n<p>It is called peasant bread because of the addition of a handful or so of the freshly milled rye flour in with the high gluten bread flour.&nbsp; This dough was so pliable and fun to work with- it begged to be braided&nbsp; !<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/08\/braided-wreath-and-rye-buns-001.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"136\" alt=\"braided wreath and rye buns 008\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/08\/braided-wreath-and-rye-buns-008_thumb.jpg\" width=\"103\" border=\"0\"><\/a> <\/p>\n<p>Sorry these pictures are so dark- it was stormy looking all day yesterday, and I didn&#8217;t realize how dark it was until I looked at these pictures this morning.<\/p>\n<p>Dividing the dough into&nbsp; pieces I rolled them into long snakes and then started braiding in the center- leaving the ends loose, I then turned the entire braid over and finished braiding backwards.&nbsp; <\/p>\n<p>Braid loosely so there is room for the bread to raise!<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/08\/braided-wreath-and-rye-buns-009.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; Then brushed on an egg white wash and sprinkled with sesame seeds.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/08\/braided-wreath-and-rye-buns-018.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"braided wreath and rye buns 019\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/08\/braided-wreath-and-rye-buns-019_thumb.jpg\" width=\"239\" border=\"0\"><\/a> <\/p>\n<p>Allow to raise about 1 1\/2 hours and then bake for about 25 minutes at 375 F.<\/p>\n<p>Isn&#8217;t it beautiful?<\/p>\n<p>I&#8217;m going to slice through it and make it into a giant picnic sandwich !<\/p>\n<p>And look how the rye rolls turned out-<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/08\/braided-wreath-and-rye-buns-020.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px;
