{"id":1451,"date":"2010-02-27T09:34:02","date_gmt":"2010-02-27T13:34:02","guid":{"rendered":"http:\/\/heidiannie.com\/?p=1451"},"modified":"2010-02-27T09:34:02","modified_gmt":"2010-02-27T13:34:02","slug":"the-beauty-of-sourdough","status":"publish","type":"post","link":"http:\/\/www.heidiannie.com\/?p=1451","title":{"rendered":"The Beauty of Sourdough"},"content":{"rendered":"<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/bread-and-frames-018.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"312\" alt=\"bread and frames 018\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/bread-and-frames-018_thumb.jpg\" width=\"416\" border=\"0\"><\/a> <\/p>\n<p>Aside from the actual loaf and the fantastic aroma and flavor- sourdough bread has virtue.&nbsp; It has a quality that may people lack- that of patience.<\/p>\n<p>It is a humble sort of yeast- consisting of a mix of store bought and wild yeasts that have been gathered over many seasons.&nbsp; It eats only once a week or so, and does that in the cold and darkness of your refrigerator.&nbsp; It keeps within its boundaries most of the time and then goes to work as soon as you add it to flour and liquids.&nbsp; AND- for my present story- it raises slowly and surely in the cold when you don&#8217;t have time to form it into a loaf and bake it right away!<\/p>\n<p>I started making this bread early in the week.&nbsp; But finishing it just didn&#8217;t fit into my schedule, so I placed the dough in a large cup, covered it securely and stuck it into the refrigerator to wait until I had more time.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/chips-and-pots-007.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"chips and pots 007\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/chips-and-pots-007_thumb.jpg\" width=\"239\" border=\"0\"><\/a> <\/p>\n<p>Mixing it up-<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/chips-and-pots-010.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"chips and pots 010\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/chips-and-pots-010_thumb.jpg\" width=\"239\" border=\"0\"><\/a> <\/p>\n<p>ready to go-<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/chips-and-pots-011.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"chips and pots 011\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/chips-and-pots-011_thumb.jpg\" width=\"239\" border=\"0\"><\/a> <\/p>\n<p>-ready for a slow raise-<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/chips-and-pots-012.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"chips and pots 012\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/chips-and-pots-012_thumb.jpg\" width=\"239\" border=\"0\"><\/a> <\/p>\n<p>of three days in the fridge!<\/p>\n<p>Three days was not what I had planned- but I&#8217;ve been so busy shopping and framing and gathering stuff to get ready for the next 2 weeks in Chincoteague that I kept punching it down when it got to the top of the bowl.&nbsp; <\/p>\n<p>Then I finally made up a small batch of whole wheat dough and added it to the sourdough- <\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/bread-and-frames-001.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"bread and frames 001\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/bread-and-frames-001_thumb.jpg\" width=\"239\" border=\"0\"><\/a><\/p>\n<p>and then I braided it together and baked it.<\/p>\n<p><a href=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/bread-and-frames-0181.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"180\" alt=\"bread and frames 018\" src=\"http:\/\/heidiannie.com\/wp-content\/uploads\/2010\/02\/bread-and-frames-018_thumb1.jpg\" width=\"239\" border=\"0\"><\/a> The flavor and texture of the sourdough improved whilst raising slowly in the cold.&nbsp; This is one of my BEST sourdough breads -EVER!<\/p>\n<p>And all because of of its patient virtue.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Aside from the actual loaf and the fantastic aroma and flavor- sourdough bread has virtue.&nbsp; It has a quality that may people lack- that of patience.
